RAY'S FAVORITE RECIPES

George Street Ale

Another potent beer, this one represents my first attempt at recipe formulation. It basically combines all of the things that I liked about the seven recipes I had brewed prior to this, so it is somewhat eclectic. Nonetheless, it produced a very nice brew, balanced and tasty. Give it a try.

Ingredients

3 lb Light Dry Malt Extract - Use your favorite brand.
1 lb Dark Dry Malt Extract - Use your favorite brand.

2.5 lb Clover Honey

0.25 lb Toasted Malt (See instructions below)
0.5 lb Crystal Malt (40-80 deg L)

1.5 oz Cascade Hop Pellets
0.75 oz Cascade Hop Pellets

1 pkg Edme Dry Ale Yeast

Procedure Notes

Toasted malt:

Pre-heat oven to 350 deg F.
Spread 1/4 lb of whole pale ale or two-row malt on a cookie sheet.
Cook for 12 minutes.
Grind grain in mill or crush thoroughly with a rolling pin.

Brewing

Use a grain bag for the grains. Add the grain to 2 to 3 gallons of cold water and heat until the water boils, stirring occasionally. Remove grains when water begins to boil.

Add extract and stir until dissolved. Add first Cascade hops. Bring to a boil and boil for one hour.

Add the final Cascade hops 3 minutes before the end of the boil.

Cool, ferment, bottle according to normal procedures.
