RAY'S FAVORITE RECIPES

Hook, Line and Sinker Strong Ale

This is the recipe I followed for my third batch of beer many years ago and the results were outstanding. So outstanding in fact that I knew as soon as I tasted the finished beer that I would be making my own beer for a long time to come. That was more than 150 recipes ago and I'm still going strong. I hope the results will inspire you as much as they did me.

Ingredients

6 lb Munton & Fisons Light Malt Extract (Dry)
1 lb Munton & Fistons Amber Malt Extract (Dry)

0.5 lb Toasted Malt (See instructions below)
1 lb Crystal Malt (40-80 deg L)

1.5 oz Bullion Hop Pellets
0.75 oz Cascade Hop Pellets

2 tsp Gypsum

2 pkg Munton & Fisons Ale Yeast

Procedure Notes

Toasted malt:

Pre-heat oven to 350 deg F.
Spread 1/4 lb of whole pale ale or two-row malt on a cookie sheet.
Cook for 10-15 minutes until slight reddish color forms.
Grind grain in mill or crush thoroughly with a rolling pin.
Repeat with the remaining grain.

Brewing

Use a grain bag for the grains. Add the gypsum and the grain to 2 to 3 gallons of cold water and heat until the water boils, stirring occasionally. Remove grains when water begins to boil.

Add extract and stir until dissolved. Add Bullion hops. Bring to a boil and boil for one hour.

Add the Cascade hops 1 minute before the end of the boil.

Cool, ferment, bottle according to normal procedures.
